When Carly and I moved to Lucknow in 2021, we came for the coffee. We wanted to build a specialty cafe in a city we had fallen in love with. What I did not expect was how often the conversation at our counter would turn to burgers.

Lucknow taught me something quickly. This city takes its food personally. People here grew up on some of the finest kebabs and biryani in India, so when they eat anything, including a burger, they know the difference between food made with care and food made in a hurry. You cannot fool a Lucknow palate.

So when we decided to put a burger on our menu, I knew it could not be an ordinary one. If people searching for the best burger in Lucknow were going to walk through our doors, the burger had to earn that visit. This post is my honest answer to that search. I will explain what I believe makes a burger genuinely great, why we chose the smash burger style, and exactly what goes into the two burgers our guests keep coming back for.

What I Look For in a Great Burger

Before I tell you about ours, let me share the checklist I used when we were developing the recipe. These are the five things I believe separate a memorable burger from a forgettable one, anywhere in the world:

  • A patty you control from the mince onwards. When a kitchen minces its own meat, it decides the cut, the fat percentage and the seasoning. That control is where flavour begins, and there is no shortcut around it.
  • A real sear on the meat. That browned, slightly crisp crust on the patty carries most of the flavour. It only happens with high heat and fresh meat.
  • A bun that holds together. Soft, lightly toasted, and sturdy enough to survive the juices without collapsing halfway through. A good potato bun does this better than anything else.

  • Balance in every bite. The patty, bun, sauce and toppings should land together. If one element shouts over the rest, the recipe needs more work.

Why We Chose the Smash Burger

You may have noticed the words “smash burger” appearing on menus around the world in recent years. It is not a marketing phrase. It is a specific technique, and once I understood it, there was no question about which style we would serve.

Here is the difference. A traditional thick patty is cooked gently, which keeps it tall but often leaves the outside pale and the inside uneven. A smash burger flips that logic. We take a ball of fresh mince and press it hard onto a very hot griddle. That pressure creates maximum contact between meat and heat, which builds a deep, caramelised, lacy crust across the whole patty in about two minutes. The edges turn crisp, the centre stays juicy, and the flavour is on another level entirely.

Coming from specialty coffee, this approach made complete sense to me. In coffee, we obsess over extraction, because technique is what turns good beans into a great cup. The smash technique is the same idea applied to a burger. Same ingredients, completely different result, all because of how you apply heat.

Our Smash Burgers at Overflow Coffee, Golf City

Let me tell you exactly what goes into ours, because the details matter. We source our meat from Fresh Choice Farms and mince it ourselves, in our own kitchen. We order the fat percentage separately and mix it in ourselves, so the patty is exactly what we want it to be, and we make our own spice blend for the seasoning. The buns are potato buns, baked in-house by our bakery team, and every sauce is made in our kitchen. Nothing in these burgers arrives ready-made. Here is what we serve.

Chicken Smash Burger

This is the one our guests talk about the most. Chicken minced in our own kitchen, smashed on a hot griddle until the edges crisp up, layered with our house-made sauce inside a soft potato bun from our bakery. One guest recently wrote that it was “hands down the best we’ve had till date. Absolutely a must-try.” I will not pretend that review did not make my week. We hear something similar at the counter almost every day now, and it is the reason I feel comfortable writing a post with this title.

Mutton Smash Burger (₹700)

This one is for the serious eaters, and in Lucknow that is saying something, because this city understands mutton better than almost anywhere in India. We make it with a double smashed lamb patty, so you get twice the caramelised crust, then top it with an over-easy egg, caramelised onion and our spicy mayo. It is rich, gloriously messy, and a complete meal on its own. I knew the mutton burger had to clear a very high bar in this city. We built it to clear that bar.

What I Recommend Alongside

Do yourself a favour and pair your burger with an iced latte or a classic cappuccino. It sounds like an unusual combination until you try it. Good coffee cuts through the richness of a smash burger beautifully, and since every cup here is brewed to SCA standards by baristas Carly and I trained personally, the coffee will hold its own next to the food. If you still have room after that, our blueberry cheesecake and cookies come from the same in-house bakery team that bakes our burger buns.

My Honest Advice: Eat It Fresh Off the Griddle

Here is something I tell everyone. Smash burgers are at their absolute best in the first few minutes after they leave the griddle. That crisp, caramelised crust is the whole point of the technique, and like a fresh jalebi or a hot kulcha, it is simply a different experience when you eat it right away.
